A gentleman in England by the name of Dan Fell came up with a KFC style recipe and after many attempts to perfect he came up with a winner in my books. I have prepared it 4 times and it is as close to the Colonel's chicken as I have ever made. I have the recipe available on a separate posting on this Blog called Dan Fell's KFC style Coating. The judges at my table give this recipe thumbs up, and when served with my KFC style gravy it hits a home run. You can find the gravy recipe on a separate posting on this Blog.
Deep fryer: Heat oil to 325° F
1 egg white
2 cups milk
½ tsp salt
1 frying chicken cut up
2 tsp salt
2 cups Dan’s coating mix (see separate Blog posting for recipe)
2/3 cup self rising flour
Place cut up chicken in large bowl,
add 2 tsp salt then toss to coat all pieces. Set aside, covered, for 1 hour. After
the hour has passed, drain and remove chicken, dry with paper towel.
In a large bowl mix egg white, milk
and ½ tsp salt.
In another large bowl add Dan’s
coating mix and self rising flour, whisk together well.
Place chicken pieces into coating
mix to coat well. Remove chicken, shake off excess flour, place on a rack for
20 minutes and keep in fridge. Important!
Once 20 minutes has passed, dip chicken in egg wash
Place chicken into coating mix again (you are double dipping), shake off excess and place on rack
Place rack into fridge for 20 minutes, keep in fridge. Important!
Note: These are Important to ensure the coating sticks to the chicken pieces through the cooking process.
Place coated refrigerated chicken pieces into hot oil, cook for 10-12 minutes, or when the pieces float. Do not crowd the chicken, or the oil temp will be slow to recover to 325°, and the chicken will have panic attacks if crowded
Remove chicken from deep fryer and
place on a wire rack then put into preheated 175° F oven to hold until all
chicken is cooked.
Before serving, check meat temperature,
it should be at 170°
Just prior to serving, place chicken back into hot oil for 90 seconds to crisp up if so desired. It is worth the extra step.

Oven bake method:
Preheat oven to 375° F
Heat 2” of oil in skillet to 375°F
Place wire rack onto cookie sheet
Place chicken into hot oil and fry
for 2-3 minutes, turning to lightly brown all sides.
Place browned chicken pieces onto
wire rack then into preheated oven.
Bake for 30 minutes or until largest piece is at 165° F
Spicy Chicken
Mix 2 cups buttermilk, 1 cup Frank’s
Hot Sauce, 1 tablespoon salt and 1 teaspoon ground white pepper.
Place chicken pieces into marinade then place in fridge for at least 6 hours, best is 24 hours. Remove chicken from marinade and drain, do not rinse. Use in recipe as described.
