Sichuan Spicy Long Green Beans



1 lb long beans or green beans if long beans not available, sliced into 3” pieces
1/4 cup cooking oil

Sauce:

2 Tbsp water
1Tbsp soy sauce
1 tsp ginger paste
1 tsp chilli paste
2 tsp Mirin or white sugar
1/2 tsp dried chilli flakes

Mix all ingredients well and set aside.

4 garlic cloves minced well or pressed
2 green onions sliced fine

Place wok or heavy bottom pan over high heat, add oil. Once oil is to smoking point add beans and stir fry until nearly cooked. Once beans are hot, but not fully cooked pour onto tray lined with paper towel to allow beans to drain the oil.

Place wok back over high heat and add garlic. Cook garlic until lightly brown. Once garlic is lightly brown add sauce ingredients and bring to a rapid boil.

Add beans and stir fry until liquid is reduced to almost nothing. Add green onions and stir for 30 seconds longer. Remove from heat and turn out beans on to serving tray and serve immediately.

These little buggers are sooooo good! The kids love them and while they have some heat to them the sweet of the Mirin or sugar makes them a real treat.

Both of these dishes are a family favourite and have been so for many years. The kids love them and they are requested often. I love to cook them just to watch the kids eat.
